Banana bread is a classic comfort food recipe and is so easy to make. I’ve been baking banana bread for years and I have perfected this recipe and I couldn’t wait any longer to share with all of you! It’s moist, light and infused with an abundance of flavour everyone will like.
We’ve all been guilty of forgetting about bananas in our fruit bowls, only to find they’ve gone past ripe and aren’t the most appealing to eat. In fact, 1.4 million bananas are thrown away each and every day in Britain alone! Baking this banana bread is a perfect way to use up these bananas. The past ripe texture makes it great to mash them up to create this perfect bake.
There are no eggs in this recipe. If you know me by now, I have a love hate relationship with eggs. To stay true to my ethics, I only purchase organic eggs, which of course can be expensive. After experimenting with recipes, I found that eggs as an ‘ingredient’ (e.g in a cake) are not needed. Yes, I’ll use eggs in a beloved Moroccan Shakshuka, because eggs are the dish. Leaving eggs out of cakes can save you so much money and taste just as good (if not better…).
This main ingredients for this are probably sat in your kitchen cupboard right now, just waiting to get mixed in with those ripe bananas! Feel free to change up this recipe and make it you own. I love using dark chocolate chips, but if you’re looking for something healthier, swap those for some raisins, dried fruit or slices of banana!
Vegan? This recipe is super easy to make vegan. Simply subside the butter for a vegan alternative and find some vegan chocolate chips. Gluten free? Just swap the flour with your favourite alternative gluten free flour.
