No Egg Easy Banana Bread (Recipe + Tips)

It’s been a while Low Cost Lovers, but I’m back and I’m not empty handed! Use up those ripe bananas you no longer want and make this banging banana bread – the perfect treat at any time of the day. Follow the easy and cheap recipe below for a banana bread loaf no one can say no to for under £2!

Banana bread is a classic comfort food recipe and is so easy to make. I’ve been baking banana bread for years and I have perfected this recipe and I couldn’t wait any longer to share with all of you! It’s moist, light and infused with an abundance of flavour everyone will like.

We’ve all been guilty of forgetting about bananas in our fruit bowls, only to find they’ve gone past ripe and aren’t the most appealing to eat. In fact, 1.4 million bananas are thrown away each and every day in Britain alone! Baking this banana bread is a perfect way to use up these bananas.

There are no eggs in this recipe. I have a love hate relationship with eggs. To stay true to my ethics, I only purchase organic eggs, which of course can be expensive. After experimenting with recipes, I found that eggs as an ‘ingredient’ (e.g in a cake) are not needed. Yes, I’ll use eggs in a beloved Moroccan Shakshuka, because eggs are the dish. Leaving eggs out of cakes can save you so much money and taste just as good (if not better…).

This main ingredients for this are probably sat in your kitchen cupboard right now, just waiting to get mixed in with those ripe bananas! Feel free to change up this recipe and make it you own. I love using dark chocolate chips, but if you’re looking for something healthier, swap those for some raisins, dried fruit or slices of banana!

Vegan? This recipe is super easy to make vegan. Simply subside the butter for a vegan alternative and find some vegan chocolate chips. Gluten free? Just swap the flour with your favourite alternative gluten free flour.

Ingredients
  • 3 ripe bananas
  • 115 g caster sugar
  • 60 g melted butter (vegan alternatives work too)
  • 1 tsp vanilla extract
  • 180 g self raising flour
  • 1/2 tsp baking powder
  • 100 g chocolate chips (or anything else you want to throw in)

  • 3 ripe bananas

Banana Bread
Instructions
  1. Preheat oven to 180° fan and grease and line a loaf tin.
  2. In a large bowl, mash the bananas with a fork.
  3. Add the sugar and mix together well.
  4. Add the melted butter and mix.
  5. Add the vanilla extract, flour and baking powder and mix.
  6. Add the chocolate chips (and any of the other optional ingredients).
  7. Pour into the a greased loaf tin.
  8. Bake for around 40 minutes. If the centre of the cake is not done but you are happy with the colour on top of the cake, leave in oven for an extra 10 minutes but cover with tin foil.
  9. Take out of oven and leave to cool.
